Fresh baby spinach, sliced mushrooms, onions, garlic, and cream cheese.

Creamed Spinach with Mushrooms
3 Tbsp. Olive oil
9 oz. Baby spinach
8 oz. mushrooms, sliced
1/2 yellow onion, sliced
2 cloves garlic, minced
4 oz. Cream cheese
3 Tbsp. Parmesan Cheese
Kosher salt, to taste
Black pepper, to taste
Pinch of ground or fresh nutmeg
Pinch of crushed red pepper flakes
In a large skillet heat oil over medium heat and sauté onions with garlic until translucent. Sprinkle with salt and pepper and add mushrooms. Cook until mushrooms are soft. Drain excess liquid.
Add spinach and cook until wilted. Make a well in the middle of the mixture and add cream cheese and Parmesan cheese. Reduce heat and stir until cheeses melt. Add nutmeg, red pepper, and adjust seasonings. Serve!
